The day of the Three Wise Men is approaching and with it, the traditional king cake that we all like so much. But this year we are going to offer you a delicious alternative to surprise your guests: add strawberries!

As you know, strawberries are a very delicious fruit and also very beneficial to our health, since they contain few fats or calories. At the same time, they are high in fiber, vitamin C and antioxidants.

1.- King cake with strawberry cream filling

Once the base is elaborated, we will need the following ingredients to make the cream:

  • 300 gr washed strawberries (there will be a puree of about 100 grams)
  • 1 packet neutral gelatin (10 grams)
  • 100 grams icing sugar
  • 500 ml liquid pastry cream
  • 1 teaspoon pink / red food coloring
  • Dehydrated strawberries
  • 1 egg

First, blend the strawberries. Then, heat them over low heat and, when they are warm, add the neutral gelatin. Mix carefully so that it does not set. In a separate bowl, mix the icing sugar together with the cream, which must be very cold. Start to whip the cream and add the strawberry mix. Do not let the cream mount completely, it’s better to beat at medium speed. Add the food coloring and continue mounting the cream at medium speed. To finish off, spoon it into a pastry bag, let it cool in the fridge and pipe the cream onto the rosco.

2.- Decorate the cake with strawberries

Another much simpler option is to use the strawberries as decoration on the top of the cake. Traditional king cake is usually topped with candied fruit, which, according to legend, represents the gems and emeralds that the kings wore on their tunics. Although some people don’t like it, pastry chefs still use it because the fruit best sticks to the cake this way. But in this case, if you are going to make a homemade king cake, you can opt for a healthier choice such as decorating the king cake with fresh strawberries.
